The itinerary for the lunchtime class is slightly different. You will meet your chef at the meeting point and visit a traditional local market to shop for the ingredients for your meal. Experience the most authentic way to enjoy pizza. Make it yourself from beginning to end in Rome. Your guide/ chef will take you through all the steps, from preparing the dough to cooking your pizza in a wood fired oven and learn to more than 10 different pasta shapes. After meeting at a central location, your group of no more than 10 participants will be transferred to the kitchen where you will learn the art of Neapolitan style pizza making. You will also have unlimited red wine. Join a small cooking class of a maximum of nine participants inside a real Italian pastificio (pasta factory). Learn how to make many types of pasta in a simple and infallible way. Be able to recreate the dishes at home. Make handmade pasta with three different kinds of grains. The ancient Triticum Monococcum is considered the first cereal cultivated by man, around 7500 BC. Senatore Cappelli selected by Nazareno Strampelli in 1915 disappeared in the 1960s then was rediscovered thanks to a small farmer. The gluten-free Grano Saraceno (buckwheat) flour is the third flour you will use. Receive a welcome drink and listen to an explanation of safe food cutting procedures. Create thin sheets of pasta dough colored green with spinach or brown with sour cocoa. Discover three types of ravioli and a typical Roman sauce such as carbonara, cacio e pepe, or gricia sauce. You will make one type of pasta without egg, which is vegan. Taste all of the pasta and sauces that you have made whilst sipping Italian wine.

Make your way to the restaurant located in central Rome where you’ll meet your small group of aspiring pizza chefs and your local guide. Here, you’ll spend a delightful evening learning how to make authentic Italian pizza from fresh ingredients.   The cooking class will set you up with a station including a work plan, an apron and rolling pin. You’ll start with a theoretical and then practical lesson on working the dough, from the ingredients to wait times to two different ways of kneading the dough. After gathering at your meeting point at the restaurant, you will depart for a brief market tour. Take a walk in the most beautiful and ancient market in the heart of Rome, Campo de Fiori. You can sample the products of local producers, and can also enjoy meeting new people. Campo de Fiori is probably the oldest and most traditional market in Rome, where the so-called "vignarole", ladies who came from the countryside every day, sell their vegetables. Throughout your market tour you, will be able to sample catious cold cuts accompanied by a glass of wine. You will also be presented with fruit and vegetable banquets, before sampling some Amari (bitters) and liqueurs. You will taste two types of balsamic vinegar, two types of extra-virgin olive oil, two pate, and of course, limoncello. Your instructor will greet you at the shop and welcome you to the Gelateria in the center of Rome. All the ingredients and machinery will be ready for you to learn how to make this delicious treat. The ice-cream expert will show you first how to make three flavors of gelato, a white base from milk cream, a yellow base from eggs, and a fruit base from fruit.  After the demonstration, you will make one flavor of gelato from a selection. Your instructor will teach you how to use the machinery and the correct amount of each ingredient to use. Then, try your own ice-cream and taste more flavors from the shop.

Luigi was very informative, and patient with us. He was very friendly as well. My only recommendation is that they should give us and the operators a microphone and headphone so that we have the ability to listen to the tour guide even if we are not next to him. The pasta making was excellent and a great way to end the tour.

We had an amazing time! I was mildly concerned about the outdoor kitchen in December, but it was perfect. The “outdoor” kitchen was an enclosed space temperature controlled and a perfect set up for making pizza. We learned a lot, made and ate a great meal, and really enjoyed out chef. Great experience in Rome!

Very nice and very educational activity with chef Guiseppe where we cook "real" pizza and "real" pastas. And then we eat them .... We would have liked to leave with a recipe to make the dough.

Wonderful experience. A must when visiting Rome. Tom was an outstanding, very thorough, fun instructor. Delicious food and a lot of it. Drinks included. We will do it again.
