The term vitel tonnè comes from the Piedmontese dialect and refers to a meat dish topped with an anchovy sauce. Although the origins of this dish are shrouded in mystery, it is known that anchovies from nearby Liguria were widely used as an alternative to salt, which had prohibitive prices in the Middle Ages.   Last but not least, sample an array of delicious local cheeses, many of them recognized with protected designation of origin (DOP) status.

Meeting point was easy to find. Nice local guide, had good detailed knowledge. Tastings were well proportioned, but not too much so that you weren't stuffed. After chocolate, chocolate coffee and plenty of cheese tasting, a nice conclusion with appetizers and wine. We recommend.
